Like a Christmas cake, it is covered with pale sweet almond paste. The decoration is plain - twelve little balls of smooth paste. A specially baked simnel cake is a wonderful gift to take to your mother for Matronalia, Mother's Day, or Mothering Sunday Tea Time. Decorate it with crystalised flowers and tie some yellow ribbon around the side.
INGREDIENTS:
FOR THE ALMOND PASTE:
* 400 g icing sugar, sifted
* 250 g ground almonds
* 1 large egg yolk, beaten lightly
* 3-4 tablespoons orange juice
* 5 drops almond essence
FOR THE CAKE :
* 250 g plain flour
* 1 pinch salt
* 1 teaspoon nutmeg
* 1 teaspoon cinnamon
* 280 g currants
* 250 g sultanas
* 110 g mixed peel
* 160 g butter
* 160 g caster sugar
* 3 large eggs
* 200 ml milk, to mix
YOU WILL ALSO NEED:
* a sifter,
* nest of bowls,
* food processor or electric beater,
* spatula,
* wooden spoon,
* 24 cm round cake tin,
* baking paper,
* brown paper and twine,
* rolling pin,
* thin metal skewer.
TO MAKE YOUR OWN ALMOND PASTE YOU WILL NEED:
* a food processor fitted with a steel blade.
* Don't be tempted to use store-bought almond paste because it contains lots of sugar and few almonds, it will turn to liquid under the grill.
DIRECTIONS:
Place icing sugar and almonds in food processor bowl. Process, slowly dripping in egg yolk, orange juice and almond essence. The mixture should form a pliable paste. Set aside a small portion for balls with which to decorate the cake. Roll out the remaining paste into 2 circles which are the approximate size of the tin. Set aside.
Preheat oven to 160^0C/320^0F.
Use a sturdy non-stick cake tub or line the buttered base with baking paper. As the baking period is long (1-1 1/2 hours), prevent the cake drying out by wrapping a double thickness of brown paper around the pan and securing it with twine.
Sift flour, salt and spices together, then stir in fruit and peel. Cream butter and sugar thoroughly until light and creamy then beat in eggs one at a time, until the mixture is fluffy. (Reserve a drop of egg yolk for brushing over top layer of almond paste.). Stir flour and fruit into creamed mixture (you may need to add a little milk to give the mixture a dropping consistency).
Place half the mixture into a greased and lined cake tin. Place one pre-rolled round of almond paste over the top. Cover with remaining cake mixture. Before baking the cake, give the pan of mixture a sharp tap on to a firm surface. This settles the mixture and prevents holes from forming in the cake.
Bake in the centre of the oven for 1-1 1/4 hours or until a thin metal skewer inserted in the centre of the cake comes out without a trace of stickiness. Level the cake by placing a weighted plate on top of the cooked cake while it is still hot.
Turn out cake on to a wire rack after leaving it to settle in the cake tin for between 10 and 15 minutes. Peel off paper and leave to cool completely.
Cover the top of the cake with a second round of almond paste. Roll 12 small balls of paste and place evenly around the top of the cake. Brush the top with a little beaten egg and very lightly brown under the grill until the almond paste turns light golden brown. Remove and leave to cool.
NOTE FROM SOMEONE WHO TRIED THIS RECIPE:
I did give the pan it's tap to get rid of air bubbles but almost had a disaster when I went to take everything off so that I could set this on a cake rack to cool.. the almond paste in the middle was still liquid and was leaking down the sides of the cake at a great rate, so I quickly shoved it as neatly as I could back into the springform and let it cool completely before loosening it again. At least my baking paper helped stem the flow before I lost it all. Some of my twelve little balls slipped off while I had this in the oven the second time... so I'd advise not to put them too near to the edge of the cake.

Symptoms: Constant hunger, frequent urination, great thirst, progressive weakness, loss of flesh, mental depression, and a dry, red tongue. Irritability, restlessness and lethargy.
There is not a known remedy that will cure diabetes without a reformation along the lines that cause it. Usually also some color trouble. Using powdered burdock root, yellow dock root, or bayberry bark (a high enema) should be taken every day. Four quarts of boiling water over one tablespoon of the powdered herb, stir, and use. Lying in a tub of hot water for one half hour to 2 hours will greatly help to eliminate the sugar and waste matter from the system. Also, drink a hot tea made either with red raspberry leaves, blueberry leaves, dandelion root, or pleurisy root while in the tub.
Fomentations, followed by short cold, should be applied to the spine, also over the stomach, liver, spleen and pancreas daily. Take cold morning baths every morning, rubbing the body with a cold wet towel, then a dry one.
The bowels should be moved at least 3 times a day. Do not take harsh cathartics. Use herbal laxative compounds.
Most importantly, correct the diet. Meat of all kinds must be excluded from the diet, also milk and eggs should be reduced to a minimum.
Stimulating foods are strictly forbidden, as well as oysters, chickens, clams, crabs, etc. Avoid all starches, sugars, except natural sweets such as juice of ripe fruit. Bran, oatmeal and slippery elm water are very beneficial. Avocados are excellent, when thoroughly ripe they are almost a specific. Eat all fresh fruits, but not fruits and vegetables at the same meal. Tender beet tops and young tender beets are very desirable. Blueberry leaves, red root, and dandelion root tea are also especially beneficial.
Best herbs: beech, blue cohosh, golden seal, Indian hemp, white pine, Poplar, queen of the meadow, saw palmetto berries, sumach berries, uva ursi, wild alum root, wintergreen, yarrow, buchu, dandelion root, bittersweet, white pine combined with: uva ursi, marchmalow and poplar bark, equal parts. Raspberry leaves and pleurisy root. If kidneys and nerves are in bad condition or affected, use one of the following herbs: cornsilk, cubeb berries, fennel, skullcap, wild cherry bark, and nerve root.
JAMBUL: Eugenia Jamolana of the Family Myrtaceae. India, moderate climate, fair amount of sun and water. Seeds are blackish-brown, about ј inches long and slightly less in diameter. Bark also used, astringent diuretic. After only a short period of time, sugar in urine greatly reduced. Take with or after meals, in water or other liquid. Seed is ground and powdered, average dose is 5-30 grains. Seed coverings should be removed before seed is ground and seeds should not be subjected to heat.

(A friend of mine asked me this question, and I decided to cross post my answer as a blog post.)
What do you get out of Freemasonry as far as spirituality?
I can't say I really get that much out of Freemasonry spiritually. Or, maybe I do. It's hard to say. For me Freemasonry is my 'church'. It provides the positive things that exist in a regular church without what I would consider any of the bad stuff.
The positive things about a Church include being part of a community, having strong moral principles reinforced, and helping one another.
We have all of that in Freemasonry but without anyone telling me I have to believe any specific thing about God. I don't have to tithe. I don't have to follow any dogma or catechism. No one calls me a sinner. No one tells me I'm going to hell. We strive to be good and moral men not out of a threat of punishment but because it is the right thing to do and is written in our hearts.
We only teach moral lessons in Freemasonry and do not propose any specific definition of God (other than referring to God as 'the creator of the Universe').
For practical purposes I am still more or less an atheist, at least that's what most people would consider me. What I actually am is a pantheist, but I find that many famous members of Freemasonry were deists or pantheist as well so I find myself in good company.
I have a very strong personal sense of morality and I find that the principles in Freemasonry match what I already believe.
I like surrounding myself and socializing with men of strong moral character, men I can trust and men that I am proud to call friends. I also enjoy instilling principles of morality into the youth who are part of our affiliate organizations and watching them become better men and women as they grow into their adult life.
